Sausage and Mango Salad

Dressing
1/4 cup (60 ml) mayonnaise
1 tbsp (15 ml) Dijon mustard
1 tbsp (15 ml) lime juice
Salad
4 cups (100 g) fresh baby spinach
1/2 bulb fennel, stems removed, thinly sliced on a mandoline
1 cup (30 g) sprouts (such as onion, radish, pea)
1/2 cup (15 g) small basil leaves
4 spicy Italian sausages, blanched and halved lengthwise
2 mangoes, peeled and halved along the pit
2 tbsp (30 ml) olive oil
Salt and pepper
Preparation
Dressing
In a bowl, combine all of the ingredients. Set aside.
Salad
In a bowl, toss the spinach, fennel, sprouts and basil. Set aside.
Preheat the grill, setting the burners to high. Oil the grate.
Grill the sausages and mangoes for 2 minutes on each side. Slice the mangoes into strips and add to the salad.
Divide the salad and sausages among four plates. Drizzle with the dressing to taste. Season with salt and pepper.
