Potato and Tuna Croquettes with Pickle Sauce

Pickle Sauce
1/2 cup (125 ml) sour cream
2 tablespoons (30 ml) mayonnaise
1/4 cup (60 ml) dill pickles, drained and finely chopped
4 small sweet pickles, drained and finely chopped
1 tablespoon (15 ml) dill pickle juice
1 tablespoon (15 ml) sweet pickle juice
Salt and pepper
Potato and Tuna Croquettes
2 cups (500 ml) mashed potatoes
2 cans 170 g oil-packed tuna, drained
1 egg
3/4 cup (180 ml) breadcrumbs
2 tablespoons (30 ml) butter
1 tablespoon (15 ml) olive oil
Preparation
Pickle Sauce
In a bowl, combine all the ingredients. Season with salt and pepper. Cover and refrigerate.
Potato and Tuna Croquettes
In a bowl, combine the potatoes, tuna, egg and 60 ml (1/4 cup) breadcrumbs. Season with salt and pepper. Place the remaining breadcrumbs on a shallow plate.
Shape the potato mixture into eight patties of about 75 ml (1/3 cup) each. Press on both sides in the remaining breadcrumbs.
In a large non-stick skillet, brown the patties in the butter and oil for about 3 minutes per side or until golden brown. Serve with the pickle sauce and a green salad.
