Patatas bravas

Ingredients

• Fried Potatoes

  • 1 cup (250 ml) olive oil
  • 4 large russet potatoes, peeled and cut into 1/4-inch (1/2-cm) thick slices
  • 4 cloves garlic, peeled and lightly crushed
  • Salt and pepper

• Garlic Mayonnaise

  • 1/2 cup (125 ml) mayonnaise
  • 2 cloves garlic, finely chopped
  • 1 teaspoon (5 ml) Dijon mustard

• Smoked Paprika Sauce

  • 1/2 cup (125 ml) prepared tomato sauce (smooth purée)
  • 1/2 cup (125 ml) water
  • 1 tablespoon (15 ml) smoked sweet paprika
  • 1 tablespoon (15 ml) sherry vinegar
  • 1 teaspoon (5 ml) sugar
  • 1 clove garlic, finely chopped
