Fried Potatoes

  1. In a large skillet with high edges, brown the potatoes and garlic in the oil the on both sides, stirring frequently, until cooked and crisp, about 20 minutes. Remove the garlic when it starts to brown. Drain the potatoes on paper towels or on a wire rack. Season with salt and pepper. While cooking the potatoes, make the garlic mayonnaise and smoked paprika sauce.

Garlic Mayonnaise

  1. In a bowl, combine all the ingredients. Refrigerate, if necessary.

Smoked Paprika Sauce

  1. In a small saucepan, bring all the ingredients to a boil and simmer gently for about 5 minutes, stirring frequently. Season with salt and pepper.
  2. Divide the potatoes among four plates. Top with paprika sauce, to taste, and garnish with garlic mayonnaise.

Note

This paprika sauce is also excellent on deviled eggs, grilled shrimp, chicken, or calamari.
