Ingredients: 1 cup (170 g) cooked cold chicken, diced; 1/4 cup (60 ml) mayonnaise; 1 tbsp (15 ml) spicy barbecue sauce; 1 carrot, peeled; 1 tbsp (15 ml) lemon juice; 2 tsp (10 ml) olive oil; 2 poppy seed kaiser buns, cut in half; 3 iceberg lettuce leaves, thinly sliced; 1 oz (30 g) blue cheese, crumbled

Ingredients

- 1 cup (170 g) cooked cold chicken, diced
- 1/4 cup (60 ml) mayonnaise
- 1 tbsp (15 ml) spicy barbecue sauce
- 1 carrot, peeled
- 1 tbsp (15 ml) lemon juice
- 2 tsp (10 ml) olive oil
- 2 poppy seed kaiser buns, cut in half
- 3 iceberg lettuce leaves, thinly sliced
- 1 oz (30 g) blue cheese, crumbled

Preparation

- In a bowl, combine the chicken, mayonnaise and barbecue sauce. Season with salt and pepper. Set aside.
- With a vegetable peeler, make long ribbons with the carrot. Place in a bowl. Add the lemon juice and olive oil. Season with salt and pepper.
- Spread the chicken mixture over the bottom of each bun. Garnish with the carrot ribbons, lettuce and blue cheese. Close the sandwiches.
