- In a bowl, combine the chicken, mayonnaise and barbecue sauce. Season with salt and pepper. Set aside.
- With a vegetable peeler, make long ribbons with the carrot. Place in a bowl. Add the lemon juice and olive oil. Season with salt and pepper.
- Spread the chicken mixture over the bottom of each bun. Garnish with the carrot ribbons, lettuce and blue cheese. Close the sandwiches.
