Bao Bun-Inspired Chicken Sandwich with Pickled Carrot

  1. Using a vegetable peeler, cut the carrot into long ribbons. In a bowl, combine the carrot ribbons with the vinegar and sugar. Let sit for 5 minutes. Drain.
  2. Cover one side of each bread slice with the mayonnaise. Drizzle with hoisin. Divide the chicken among 4 pieces of bread. Top with the cucumbers, carrot ribbons, jalapeño and cilantro. Close the sandwiches.
