- Crack the egg into a 3 ¾-inch (9.5 cm) wide ramekin and add the chives, if desired. Season with salt and pepper. Whisk with a fork.
- Place the ramekin in the microwave oven. Cover with a small plate and cook for 30 seconds. Place the cheese over the egg and cook, uncovered, for 10 seconds or until the egg is cooked.
- Cover the inside of the English muffin with mayonnaise. Add the lettuce and omelette. Add a topping, if desired.
