  1. Crack the egg into a 3 ¾-inch (9.5 cm) wide ramekin and add the chives, if desired. Season with salt and pepper. Whisk with a fork.
  2. Place the ramekin in the microwave oven. Cover with a small plate and cook for 30 seconds. Place the cheese over the egg and cook, uncovered, for 10 seconds or until the egg is cooked.
  3. Cover the inside of the English muffin with mayonnaise. Add the lettuce and omelette. Add a topping, if desired.
