Pickled Radishes

  1. In a bowl, combine all of the ingredients. Let marinate for 30 minutes or until the radishes turn bright red.

Green Onion Sauce and Noodles

  1. Meanwhile, in a small pot over medium-high heat, soften the green onions, ginger and garlic in the vegetable oil for 5 minutes or until the green onions are tender and translucent. Remove from the heat and let cool for 30 minutes.
  2. Add the mirin, tamari, vinegar and sesame oil to the pot. Mix well to combine. Set aside.
  3. In a pot of lightly salted boiling water, cook the noodles until al dente, about 4 minutes. Drain. Rinse under cold water and drain well.
  4. Serve the noodles in bowls. Drizzle with the green onion sauce. Garnish with the pickled radishes and sesame seeds. Serve at room temperature.
