1/4 cup (60 ml) mayonnaise
4 tsp (20 ml) Dijon mustard
4 tsp (20 ml) chives, finely chopped
1 tomato, sliced
1 avocado, sliced
1 lime wedge
Tabasco sauce (optional)
8 slices sandwich bread
2 tbsp (30 ml) butter
4 eggs
8 Boston lettuce leaves
Preparation
In a bowl, combine the mayonnaise, mustard and chives. Set aside.
Place the tomato and avocado slices on a plate. Drizzle with lime juice and a few drops of Tabasco sauce, if desired. Season with salt and pepper.
In a skillet over low heat, melt the butter and fry the eggs, cooking them on one side only. Season with salt and pepper.
Meanwhile, toast the bread in the toaster.
Spread the mayonnaise mixture on the toast. Garnish four of the toast slices with the tomato, avocado and lettuce. Top each with an egg and close the sandwiches. Serve immediately.
