Shredded Turkey Sandwich with Gravy

⅓ cup (60 g) cooked turkey, shredded
1 tbsp (15 ml) Dijon mustard
1 tbsp (15 ml) onion confit
1 tbsp parsley leaves, finely chopped
1 slice raclette cheese (about 1 oz/30 g) or sharp cheddar cheese, halved
¼ baguette, cut in half horizontally, warmed
⅓ cup (75 ml) gravy-style brown sauce, warmed
Preparation
In a bowl, combine the turkey, mustard, onion confit and parsley. Season with salt and pepper.
Layer the cheese and the turkey mixture onto the bottom half of the baguette. Close the sandwich.
Place the sandwich in a non-stick skillet over medium heat. Cover and cook for 5 minutes or until the cheese has melted. On a work surface, cut the sandwich in half, if desired. Serve with the sauce for dipping.
