1 cup (180 g) Medjool dates, halved and pitted
3/4 cup (180 ml) water
2 tbsp cocoa powder
2 tbsp (30 ml) creamy peanut butter
Oat and honey crackers
Banana, cut into rounds, for serving
Roasted unsalted peanuts, coarsely chopped, for serving
Preparation
In a pot, bring the dates and water to a boil. Simmer for 5 minutes, stirring constantly with a wooden spoon, just until the mixture forms a purée.
In a small food processor, blend the date purée with the cocoa powder and peanut butter until smooth. Add water as needed. Transfer into an airtight container. Cover and refrigerate. The spread will keep for 2 weeks in the refrigerator.
Cover the crackers with the spread. Garnish with banana slices and chopped peanuts.
