7 Classic French Dishes

Let yourself be charmed by French cuisine, which has the power to bring people together with pronounced flavours that marry discovery with authenticity. Our Test Kitchen team decided to develop a few of their favourite classics and the best way to do so was to go with tradition, but also add a touch of simplicity. The result was a few feel-good winter dishes.

1. Classic Cassoulet

Cassoulet is a copious and absolutely delicious dish made of white beans, pork and duck. Its long cooking time allows all the aromas to develop and create a wonderful marriage of flavours. This is a classic that’s not afraid of rich and complex flavours. Bonus: It leaves a sublime smell wafting throughout the house.

2. Nîmes Salt Cod Brandade

Among timeless and popular dishes from the Nîmes region of France, there’s salt cod and potato mash, or brandade de morue. Just close your eyes and imagine yourself over there, savouring this deliciously simple dish. It’s a favourite to enjoy as an appetizer or a lunch.

3. Classic Veal Blanquette

A symbol of rustic cuisine, blanquette is served both in bistros and at family dinners, just like a pot-au-feu or beef bourguignon. It’s still a favourite dish among the French and remains firmly rooted in tradition.

4. Classic Choucroute (Choucroute Garnie)

Here’s a charming version of Alsatian choucroute, which mixes family-style serving with generous fillings—including potatoes, in case the cabbage and meat are not sufficient enough! A familiar tasting dish, it’s perfect after an afternoon of skiing.

5. Steak au Poivre (The Best)

This essential French restaurant dish was missing from our collection of recipes. And it’s an authentic meal that hits the target every time! To adhere to tradition, serve it rare, with fries that you can dip in the decadent sauce.

6. Kouign-Amann

This pastry is made using bread dough, butter and sugar, and lends itself beautifully to various compositions. As it bakes, the layers of butter create flakiness and the sugar caramelizes, resulting in a texture that’s crispy on the outside and soft on the inside, somewhere between a croissant and a brioche.

7. Rum-Raisin Babas

French pastry includes inimitable desserts. Among them is the famous rum baba, made with brioche dough soaked in rum and baked in the oven in cork-shaped moulds until golden brown. These small cakes will take centre stage on a dessert table.
