- • Fresh pieces of meat can be frozen along with their marinade in an airtight container or freezer bag.
- • We don’t recommend cooking them before freezing. Reheating meat that’s already been cooked will overcook it and dry it out.
- • Tofu needs to be provided with as much flavour as possible. To do so, it can be frozen along with its marinade. As it thaws, tofu loses its water but also acts as a sponge, thus absorbing the marinade.

3. Tofu on the grill
Our sesame and honey tofu skewers will convert even the staunchest of carnivores. Pair the plant protein with chunks of zucchini that can be inserted right onto the skewer. The cooking time for both this vegetable and the tofu is roughly the same, resulting in the perfect skewer.

- • A sweet marinade pairs best with a shorter cooking time. The above-mentioned tofu marinade isn’t recommended for meat, as it risks burning on the surface before your meat is even cooked through.
- • By only putting meat onto a skewer, you ensure a desired doneness. Adding other ingredients with various cooking times increases the risk of over- or undercooked meat, or burnt vegetables.
4. Don’t skimp on the shrimp
Light up the grill and prepare these tasty skewers marinated in garlic, lemon and cayenne pepper. It only requires 10 minutes of prep and five minutes of cooking to yield delicious results. You can serve them as either an appetizer or a main dish.

- • Metal skewers are preferred over wood. Metal is a better thermal conductor and promotes even cooking. It’ll help to heat your food thoroughly, no matter the time spent on the grill. Plus, metal skewers are eco-friendly.
- • If using wooden or bamboo skewers, you can put white pieces of green onion on each end. This will keep the ends from charring. What’s more, the taste of green onions will pair nicely with the marinade.
