How to Use Leftover Cranberries

Did you use cranberries over the holidays for your side dishes or desserts? Here are a few recipe ideas to use up any excess you may have of these iconic holiday berries. Whether in a sauce, stuffing, as a flavour enhancer or simply decor, cranberries will add a touch of sparkle to your dishes and drinks.

1. Sauce

When it comes to meat or poultry during the holidays, cranberry sauce is a must! But if you don’t have enough of the berries to make it the main ingredient, use them as an accent, like in this sauce served alongside a pork loin roast.

2. Stuffing

Cranberries work wonders in stuffing, adding a tangy note and a splash of colour. Just ¼ cup is all that’s needed in this recipe for our best-ever turkey roast.

3. Fancy ice cubes

Simply place two or three red berries along with a mint leaf in each cavity of an ice cube tray, or make aromatic ice rings with cranberries, cinnamon and star anise. “Wow” factor guaranteed!

4. Cocktail garnish

Combine the red berries with thin apple slices as garnish in this gin and ice cider-based cocktail. It’s simple and sure to impress your guests. Cheers!

5. Flavoured vinegar

Leftover cranberries are great for adding a tangy flavour and a beautiful red hue to vinegar. Use this recipe in dressings, marinades, pickling brine or to deglaze a pan. It also makes a great host or hostess gift.
