What to Do with Leftover Citrus

There are so many ways to give a second life to citrus fruits that are no longer fresh. In this article, we’re sharing a few recipes you can make with these sunny fruits, such as oranges, lemons, grapefruit, clementines, etc. They can be used as a base ingredient for mayonnaise, to flavour butter or oil, their peels can be candied and their juice can be made into a versatile syrup.

1. Concentrated syrup

With citrus juice, you can whip up a concentrated syrup. This all-around and simple recipe is perfect for enhancing cocktails, adding flavour to yogurt and giving some zing to fruit salad.

2. Mayonnaise

A few ingredients are all that’s required to make your own mayonnaise, and lemon juice is one of them. It’s very easy to do, as Ricardo demonstrates in this video, and the recipe will keep for 2-3 days in the refrigerator. If you have an orange on hand, you can even make an orange mayonnaise.

3. Butter or oil

A half cup of softened butter, two tablespoons of honey and one tablespoon of orange juice are all you need to make a spreadable butter for your morning toast, croissant or cranberry scone. You can also use the zest to flavour oil.

4. Candied peel

Candying citrus peel is a delicious way to avoid food waste, especially given that it can be done with any citrus of your choosing, be it clementine, grapefruit or lime.
