July 17 to 21, 2023: What to cook this week

While you’re busy preparing everything you need for your vacation, you want to do as little as possible in terms of cooking—without having to compromise on taste and nutrition! Here’s a selection of delicious and healthy recipes, all ready to serve in 30 minutes or less.

Monday: Black Bean and Mushroom Veggie Burgers with Chermoula

This recipe combines black beans, white mushrooms and panko breadcrumbs, with an egg binding the mixture together. Slices of grilled portobello mushrooms and onions are added as a garnish as well as chermoula, an ultra tasty herb sauce that’s super quick to make.

Tuesday: Chicken Breasts Stuffed with Arugula and Parmesan

Arugula is plentiful this time of year, both at the grocery store and in your veggie patch. It’s the perfect time to make the most of it! This recipe requires you to soften the leaves in oil with garlic and shallot. Add Parmesan to the mixture and use it to stuff the butterflied chicken breasts. Then all that’s left to do is grill them on the barbecue and serve them with rice or a green salad.

Wednesday: White Fish with Orange Salad and Coconut-Lime Dressing

A creamy dressing made with coconut milk and lime zest and juice brings this recipe together with its tangy taste. Use it to cook the fish and to top the salad, which includes orange slices and cucumber. Put the finishing touches on each plate with toasted coconut shavings, cilantro leaves and chili pepper slices, adding an extra pop of flavour and textures that’ll charm the whole family.

Thursday: Green Bean, Egg and Tomato Salad

Whether you make it for a weeknight dinner or a picnic in the park, this hearty salad is an excellent summer option. You can even plan ahead by cooking the eggs and beans in advance. Before serving it, add a creamy vinaigrette to the vegetables and pecans, then garnish each plate with hard-boiled eggs and Parmesan shavings. A great speedy meal that should rally everyone around the table!

Friday: Grilled Veal with Beet and Avocado Salad

Tender, juicy veal chops that are full of flavour: Now there’s a pleasant way to end the week relaxing on the terrace. The chops are coated in herb mayonnaise, then grilled on the barbecue. Use the rest of the mayo as a dressing for the salad, which includes beets cooked en papillote on the barbecue. Everything is ready in less than 30 minutes, which gives you plenty more time to just enjoy the evening.
