October 23 to 27, 2023: What to Cook This Week

The fall routine is well under way at this time of year. That’s why it’s a good time to revisit classic dishes in vegetarian versions, fill your plates with orecchiette and even dare to put blood sausage on your menu by serving it in a different way.

Monday: Sweet Potatoes Topped with Tempeh and Tahini Sauce

For a fuss-free meatless Monday, revisit stuffed baked potatoes by replacing your usual spuds with sweet potatoes. In this vegetarian version, set aside the bacon topping and replace it with tempeh, browned with onions, honey and garam masala. Tahini sauce and a blend of fresh herbs bring the finishing touches to this original suggestion, perfect for a weeknight dinner.

Tuesday: Seared Cod with Kale and Almonds

Need an idea for a quick and simple meal? Ready in 20 minutes flat, this fish recipe is a real lifesaver on busy nights. Serve the cod fillets with a mixture of kale and peas heated up in lemon butter with almonds and dried cranberries. Quick and efficient—and really mouth-watering!

Wednesday: Orecchiette Primavera

The small ear-shaped pasta orecchiette is the star of this recipe. Serve it with zucchini and broccoli cooked in garlic and seasoned with red pepper flakes. Add cherry tomatoes to the mixed pasta and vegetables, brightened with a splash of lemon zest and juice. Top with a sprinkle of Parmesan and basil just before serving this colourful vegetarian dish.

Thursday: Hearty Indian-Style Chicken Soup

Focus on comfort with this generous soup made with pieces of precooked chicken (you can use leftover rice as well to save time). The preparation also includes cubes of sweet potato and green peas added to a savoury broth flavoured with ginger and curry powder. The soup owes its creaminess to the addition of coconut milk. An excellent meal that will be just as good, if not better, the next day at lunchtime.

Friday: Blood Sausage and Applesauce

End the week on a bold note by offering a dish that’s too often wrongly neglected: blood sausage. Once roasted, the flavour of this charcuterie is enhanced with the tangy sweetness of apples. Prepare this seasonal fruit in a tasty sauce that combines brown sugar, wine and beef broth. Serve with creamy mashed potatoes. A dish to discover or rediscover, which proves that it’s worth daring to try new things sometimes!
