If you’re looking for a few tasty and delicious dinner ideas, we’ve got you covered with these five weeknight recipes. From sheet-pan chicken to fresh fish tacos, these dishes will definitely keep you full and on budget this week.

Monday: Tofu and Mushroom Banh Mi

Add some colour to your menu tonight with banh mi filled with tofu, mushrooms and julienne vegetables. The tofu and mushrooms are coated in a sweet, spicy sauce, while the baguette is brushed with mayonnaise and topped with cucumber, coriander and chili peppers. It’s a vegetarian dish that won’t have you missing the meat!

Tuesday: Chicken with Pecorino and Lemon

Who doesn’t enjoy a meal where ingredients are all cooked on the same baking sheet? For this recipe, cook the potato and squash wedges first, and then add the chicken breast halves coated in a mixture of mayonnaise, Pecorino Romano cheese and lemon juice. Delicious…and efficient!

Wednesday: Curried Cabbage Noodles with Sautéed Beef

One way to get more vegetables on your plate is by replacing pasta with cabbage noodles. Just cut a cabbage in half and slice it into thin strips. Once coated with a mixture of curry, soy sauce and honey, you’ll truly be blown away by how amazing it tastes.

Thursday: Meal-Sized Tortellini and Vegetable Soup

This hearty soup that eats like a meal is ready in less than 30 minutes, thanks to our favourite kitchen shortcut: store-bought tortellini. Cook them in beef broth with seasonings and cherry tomatoes, and dinner is served.

Friday: Sheet-Pan Fish Tacos with Cilantro Salsa

While it may be the beginning of fall and, therefore, comfort food season, sometimes we just want a fresh meal that takes us back to a warmer time not too long ago. These fish tacos are served with a bright cilantro salsa that tastes just like summer.
