As is the case with most couscous dishes, this one’s quick to prepare–it’s ready in just 30 minutes! Add your veggies, chickpeas and dried apricots to a simmering spiced broth before removing it from the heat and adding the couscous. It’s a simple and cozy dish that you’ll want to add to your rotation.
Thursday: One-Pot Ginger Chicken and Ginger Rice
This recipe is inspired by Hainan chicken, a Southern Chinese dish. In the traditional version, the chicken is cooked slowly in broth that’s later used to cook the rice in. The same principle is applied here, preparing everything in the same pot. The ginger sauce brings a delicious finishing touch to this recipe.
Friday: Sweet and Sour Pork Tenderloins with Apple and Braised Cabbage Wedges
It’s currently peak apple season, and while the popular fruit is tasty in many desserts, now’s the perfect time to enjoy them in more savoury dishes, too. Here, pork tenderloins are served with apple and cabbage wedges, and then topped with an addictive sauce made from apple jelly.
