Key limes grow mainly in the Florida Keys region of the United States as well as in other tropical regions. They are smaller, more yellow and acidic than regular limes. Key limes have a distinctly sweet, slightly floral flavour.

Zest long, thin strips from the limes over a bowl and set aside until ready to decorate the cake. Then juice the limes for the filling.
