Maple Caramelized Walnuts
1/2 cup (125 ml) maple syrup
2 tbsp butter
1 cup (100 g) walnuts or pecans, toasted
Maple Dressing
1/4 cup (60 ml) mayonnaise
3 tbsp (45 ml) olive oil
2 tbsp (30 ml) cider or white wine vinegar
2 tbsp (30 ml) maple syrup
1 tsp (5 ml) Dijon mustard
½ garlic clove, finely chopped
Salad
½ red onion, very thinly sliced
6 cups (140 g) mesclun lettuce
1 Cortland apple or pear, peeled, cored, and thinly sliced
4 slices bacon, cooked and chopped
Preparation
Maple Caramelized Walnuts
Line a baking sheet with a silicone mat or parchment paper.
In a small pot, bring the maple syrup and butter to a boil. Cook for 2 minutes. Add walnuts. Cook, stirring with a wooden spoon, until the sugar crystallizes (becomes grainy) on the nuts. Remove from the heat.
Immediately spoon on the baking sheet. With a spatula, quickly spread the nuts. Season lightly with salt. Let cool completely. Roughly crush with a knife.
Maple Dressing
In a vinaigrette blender, shake all the ingredients until the dressing is creamy. Season with salt and pepper.
Salad
In a bowl of cold water, let the onion soak for 5 minutes to mellow out the flavour. Drain.
In a large bowl, combine the lettuce, apple, and onion. Add dressing to taste and toss well. Sprinkle with the walnuts and bacon.
