8 Refreshing Recipes to Weather a Heatwave

Staying well hydrated, eating light and reducing the time you spend in the kitchen; that’s what we all aim for during a heatwave. And even if the barbecue is your best ally for cooking when it’s hot, no-cook meals and refreshing recipes are among our favourite options.

1. Peach and Fresh Mozzarella Salad

Several salad recipes burst with seasonal ingredients, like the gorgeous, juicy peaches of summer’s end. So it’s not surprising to find them at the heart of our summertime menus. Even in the middle of a heatwave, we serve them more often with a main course than on the side. These highly nutritious meals are often just satisfying enough for an appetite affected by the heat.

2. Sundried Tomato and Prosciutto Baguette

When the temperature is at its peak and your desire to cook is at its lowest, you need ideas for quick meals you can just assemble, preferably without needing to cook anything. For lunch or dinner, there is a cornucopia of sandwich recipes available to inspire you and keep you refreshed, like this one that combines blue cheese, prosciutto, sundried tomatoes and black olives.

3. Cold Lettuce and Radish Soup

There’s nothing better to weather a heatwave than a good soup—a cold one, that is! Of course, one thinks of gazpacho, the very popular soup from southern Spain, but there is also a wide variety of other recipes available that use seasonal vegetables, including this one, featuring lettuce and radishes.

4. White Tuna Tostadas

Raw fish dishes, such as sushi, tartare, ceviche or poke bowls are always welcome when the mercury rises. But for a complete list, you should add recipes made with canned fish, which often require no cooking and no time at all to put together.

5. Strawberry and Verbena Water

In scorching heat, experts recommend drinking water, a lot of water, to stay well hydrated. Water flavoured with herbs from the garden and seasonal berries, such as strawberries or raspberries, are very attractive with their fragrant aromas and encourage us to drink more.

6. Cold Brew Coffee

Vary your repertoire of alcohol-free summer drinks by including lemonade and homemade iced coffee recipes, ideal to quench your thirst when the temperature insists on remaining above 30°C!

7. Raspberry Granita with White Chocolate and Tarragon Crémeux

Even when it’s hot, it’s pleasant to end a meal on a sweet note or treat yourself to a little indulgence as an afternoon snack. Frozen desserts, including popsicles, parfaits, granita or sorbets, will delight children and adults alike when the heat is at its peak.

8. Fruit Spring Rolls

Fresh and fruity treats gain in popularity in the summer when you’re looking for an afternoon or evening snack. And you appreciate them even more when the recipes require no cooking and can be made super quickly, such as this recipe in which you roll fresh fruit in rice paper like an imperial roll.
