10 Recipes for the Stand Mixer

For pastry-making, baking and beyond, you can count on the stand mixer to give you a helping hand, especially when it comes to kneading dough. This versatile small appliance is very practical for making smooth, homogeneous mixtures. You can use it for a ton of recipes, including the 10 that follow.

1. Multi-Grain Bread

It’s a lot easier to knead dough when you have a precious ally like a stand mixer with a dough hook. This recipe produces a dense, moist loaf that includes a blend of ground amaranth, quinoa, flax and chia, mixed with spelt flour.

2. Pizza Dough for 8

Authentic baking enthusiasts may mix their pizza dough with a wooden spoon and knead it with their hands, but we prefer leaving the job to our stand mixer and save time instead of gaining muscles. This recipe yields 4 medium-sized pizzas, good for 8 people, but we also have recipes for 4 and even for 2.

3. Sticky Buns

Homemade brioche is a brilliant option to impress everyone at the table, but it’s so much more fun to make when you’ve got the right equipment. With a stand mixer, blending the ingredients and kneading the dough are as easy as ABC. With its super moist crumb, this brioche will disappear in a flash—just like its vegan version!

4. Tourtière Briochée

Sweet brioche dough is a real treat for our taste buds, but it can also be a great savoury choice. This tourtière wrapped in brioche takes you out of the ordinary by marrying originality with tradition. Once the bread is sliced, you’ll happily discover the filling, which combines ground meat, potatoes, cinnamon and nutmeg.

5. Homemade Pita Bread

If you’re gonna make your own bread, why not try to make pita bread, which is much easier to bake than you may think? Even though the dough needs to rest for about one hour, kneading it with the stand mixer makes the task much more pleasant. Flavoured with aniseed, this version offers a moist texture and it’s even better when eaten while still warm.

A Flexible Tool

In addition to being useful for kneading dough, a stand mixer is ideal for making all kinds of other recipes. For example, you can use it to:

  • • make dips,
  • • emulsify mayonnaise,
  • • beat eggs until stiff,
  • • make pancake, muffin and cake mixes,
  • • mash potatoes
  • • and even shred meat.

6. Wonton Wrappers

Water, salt, an egg and two cups of flour are all you need to make this recipe for wonton dough, which will yield about 4 dozen squares. Simply mix the ingredients in your stand mixer to get smooth, supple dough in just 2 or 3 minutes. Then make a comforting soup, like this one with Turkey and Cilantro Wontons.

7. Butter Croissants

Our project for the weekend? Making croissants from A to Z! It takes time, but there’s nothing like a batch of these puffy viennoiseries to please the whole family. This foolproof recipe requires consistency and precision at each step. But you’ll get started on the right foot by giving the task of mixing and kneading the dough to your small appliance.

8. Caramelized White Chocolate Tart with Clementines

Made with a creamy mixture of white chocolate matched with a chocolate crust, this exquisite tart will whet your guests’ appetites as soon as they see it. For this recipe, we suggest using the stand mixer to whip the egg whites for the meringue. Once baked, they’ll decorate the dessert with the other garnishes, including clementine supremes and caramelized buckwheat.

9. Alsatian Pizza Gruyère (Flammekueche)

The tarte flambée or flammekueche is an Alsatian specialty. There are many variations, including this one, made with blond beer that allows the dough to rise before baking. Ideally, bake it on a pizza stone in the oven at high temperature. The simple topping combines a creamy white sauce, bacon, Gruyère and caramelized onions. A perfect treat for cocktail hour.

10. Whipped Cream-Filled Doughnuts

Whether you prefer them with fillings or sugar-glazed, homemade doughnuts are always a huge hit. And since you usually have to make several at once, leave it to the stand mixer to mix and knead the dough. Instead, focus your energy on cooking the doughnuts, which will probably stretch out if you have 2 or 3 dozen waiting…

Replacing the Hand Mixer

Every time a recipe calls for an electric hand mixer to mix or whip ingredients, you can replace it with your stand mixer, which will free up your hands and allow you to get started on the next step in the recipe.
