What the RICARDO Staff Ate Over the Summer

With summer coming to a close, various RICARDO staffers are looking back at some of their favourite recipes that they’ve cooked during the warmer season. Read on, and share with us some of your essential recipes that you’ve been cooking these past few months!

1. Smoked Meat Pizza on the Grill

In the past few years, I’ve picked up the habit of making more and more pizzas. And I especially love cooking them on the grill.

2. Lemon-Basil Gin Sour

We’re big fans of cocktails and we often make them at home. And we especially love it when we can make them with local spirits. I particularly adore this cocktail, which I make using Quebec gin. It’s fresh and tangy!

3. Prosciutto and Strawberry Toasts

At the start of the summer, I picked about 12 litres of strawberries, so I took the opportunity to make this beautiful prosciutto-strawberry toast. I ate it often for breakfast on weekends, and it makes you wonder why bacon isn’t replaced with prosciutto at brunch more often!

4. Spiced Beef Skewers

One evening during summer, I didn’t know what to do with my beef cubes. So I opted for something very summery: skewers. The whole family loved it!

5. Melitzanosalata (Eggplant-Feta Dip)

This melitzanosalata is full of freshness and flavour, in addition to being a great way to use up our seasonal eggplants. It was a guaranteed success at our pool parties during a heat wave!

6. Spaghetti with Garlic Scapes and Olive Oil (Aglio e olio)

I adore this quick and easy recipe with few ingredients. It’s the perfect dinner at the campsite!

7. Peach and Fresh Mozzarella Salad

I’ve often made cold salads during summer, especially during heat waves, and this one with peaches and fresh mozzarella remains a favourite. It always reminds me of summer!

This is a classic in our home, especially given the abundance of cherry tomatoes from my garden. It’s fresh and always delicious!
