8 Recipes that Prove Our Love of Butternut Squash

With its sweet and buttery flavour (in France, they even dubbed it “doubeurre,” or “sweet butter”), butternut squash is one of our favourite squashes. Its elongated shape and smooth skin make it easy to peel and cut. There are dozens of recipes for cooking it, from simple weeknight dinners to entertaining friends. 1. Crackers with Squash and Apple

Why not turn butternut squash into a snack? Diced and mixed with apple, maple syrup and cumin, it makes a fantastic topping for a cracker. Surprising and delicious!

2. Squash, Apple and Almond Dip

For an autumnal aperitif, purée the squash and mix with almond butter. Transfer the mixture to a shallow bowl and garnish with diced apple, almonds and roasted cumin. Serve the dip with crackers.

3. Beef and Squash Fried Rice

To get the desired bright orange colour for this risotto, first soften the squash, then add the rice and stir frequently, pouring in one ladle of chicken broth at a time. The rice will then absorb all the gorgeous colour of the butternut squash. As a garnish, add some Tuscan kale, a close cousin of kale.

4. Squash Risotto with Tuscan Kale

Roast the squash in the oven with some bell pepper and onion, then divide it between tortillas, adding thin slices of chili for those who would like a little more heat. Eat them while they’re still hot so that the dairy-free, vegan cheese stretches.

6. Squash Gratin with Parmesan Crumble

This gratin will make a good impression as a delicious centrepiece at the table, with its thin slices of squash alternating with apple, Parmesan, garlic and cream. On the top, the Parmesan crumble, which also includes flour, almonds and butter, makes a crunchy crust that adds to the tasting pleasure.

7. Hearty Tortellini and Squash Soup

For a satisfying soup, replace the noodles with store-bought cheese tortellini. Now, there’s a convenient shortcut for weeknight dinners. Add spinach and diced squash, then garnish with Parmesan croutons.

8. Chicken with Squash and Garlic Flower

We love dishes like this one that can be cooked in a single skillet. In this case, simply brown some chicken thighs, then add diced squash, broth and cider. The final—green—touch comes in the form of garlic flower and peas.
