1. A hearty bowl for lunch
This recipe is perfect for using up excess salmon. Break the salmon apart into flakes and let it sit in a spicy sauce until it’s ready to serve. And given that all you need to do is warm your rice, this means that you won’t burden your colleagues with a fishy smell by the microwave area of the staff kitchen.

2. A salad
For added protein to a meal, you can always count on salmon. We recommend this cold salad with salmon, spelt and avocado to enjoy at lunch. You can also swap the spelt flakes with pre-cooked rice.
3. A topping for toast
For a simple supper, place the cooked fish on some bread topped with crème fraîche, mascarpone or sour cream, like in this recipe for trout and red cabbage on naan, or on slices of rye bread with plain yogurt and thinly sliced veggies for a Danish-inspired open-faced sandwich.
4. Rillettes
With leftover salmon or trout, you can make some rillettes to serve as an appetizer. The two fish are interchangeable, so you can choose a recipe and get the same result whether you use one fish or the other.

5. Salmon rolls
Lobster isn’t the only seafood that can be served in a roll! With some leftover salmon and hot dog buns, you can get a sandwich worthy of a boardwalk food stand. You also need mayonnaise, celery and arugula for this recipe.
