From a Zucchini and Potato Omelette to an One-Pot Burrito Casserole, the five recipes featured here are meal suggestions the whole family is sure to love. Check out what you’re having for dinner this week!

Monday: Zucchini and Potato Omelette

What could be better than an omelette when you want an affordable, easy-to-cook option that makes a great meal, morning, noon and night? Use a dozen eggs for this recipe that showcases potatoes, zucchini and onions, some of which are spread on top of the omelette. Once you’ve beaten the eggs, pour the preparation into the frying pan and finish cooking the dish in the oven.

Tuesday: Baked Feta and Cherry Tomato Pasta

Take advantage of the abundance of cherry tomatoes at the grocery store to cook this super simple pasta dish. In a large ovenproof dish, bake the tomatoes in the oven along with the feta cheese, garlic, red pepper flakes and oil, then add the pasta to the mixture. Serve the dish family-style, in the centre of the table, so that everyone can serve themselves.

Wednesday: Chickpea and Tuna Meal Salad

There’s always a good reason to add this recipe to your weeknight menu. Not only is it delicious and ready in just 30 minutes, it also makes good use of two pantry staples: canned tuna and chickpeas. The legumes are added to a sweet and sour mixture of bell pepper and onion so that they soak up all the flavours. Divide this mixture among plates over a bed of arugula and sliced cucumber, then top it all with chunks of tuna.

Thursday: Crispy Tofu Fingers with Honey-Mustard Sauce

This recipe is a tip of the hat to breaded fish fingers, but using tofu instead for a satisfying alternative that’ll make both kids and adults happy. Cut the plant-based protein into thick sticks, coat them in rice cereal crumbs, then brown them in a frying pan. Finish up the meal with a green veggie and a yummy honey-mustard sauce for maximum flavour with every bite. A quick dish to put together and a favourite of children.

Friday: One-Pot Burrito Casserole

A combination of ground meat, tomatoes and beans, this one-pot dish is a great source of comfort to end the week with. The recipe also includes rice, broth and spices that you’ll combine with the rest of the ingredients in a large skillet. Once the rice is cooked, cover the dish with cheddar and slip it in the oven until the cheese has fully melted. Eat with crunchy, golden tortilla chips and sour cream. Simple and delicious!
