October 9 to 13, 2023: What to Cook This Week

From a Ratatouille (The Best), to a Smash Burger Tacos the five recipes featured here are meal suggestions the whole family is sure to love. Check out what you’re having for dinner this week!

Monday: Ratatouille (The Best)

Vegetables are in the spotlight on this Thanksgiving Monday, which leaves a little more time for you to cook. On this occasion, make this comforting vegetarian recipe that showcases fresh seasonal products, including garlic and eggplant that are cooked separately to enhance and soften the texture. A delicious dish that’ll put sunshine on the table at dinnertime.

Tuesday: Tuna Noodle Casserole

You’ve got some frozen green peas in the freezer, with egg noodles, tuna and canned cream of mushroom soup in your pantry? Then you’ve got all the ingredients you need to make a decadent casserole that has a good chance of winning over everyone at the table. Serve this ultra creamy dish with a garnish that combines Parmesan and panko breadcrumbs to give it a crunchy texture.

Wednesday: Barley, Squash and Broccoli Soup

A healthy meal that puts the emphasis on comforting autumnal flavours, that’s what awaits your family on this hump day. Chicken thighs and barley form the base of this soup, which also includes a lot of veggies, like carrots, squash and broccoli. Everything cooks in a savoury broth seasoned with garlic and fresh herbs. A recipe to make again and again—or to double for the freezer!

Thursday: Sesame Shrimp Stir-Fry

This is a mouth-watering dish that’s ready to serve in less than 30 minutes. The Asian flavours of this recipe have everything going for them. Snow peas, green onions, fresh ginger and sesame seeds are combined with shrimp and cooked in a wok. Coat the mixture with a tasty hoisin-based sauce and serve over a bed of basmati rice. A quick meal that can also make a great lunch.

Friday: Smash Burger Tacos

For Friday night dinner, embrace the taco burgers trend, a recipe inspired by smash burgers that became viral on TikTok. Our version is made with ground beef, pressed directly into the tortillas before cooking the tacos in the skillet, meat side down first. Reminiscent of the classic American burger, the toppings include a slice of melted cheese and a creamy sauce as well as lettuce and pickles.
