December 4 to 8, 2023: What to Cook This Week

While your preparations for the holidays are monopolizing more and more of your time, take a few shortcuts on weeknights by going for frozen ravioli or cooking with ingredients from the pantry. Fried rice, poached eggs, croquettes, etc.—flavours and variety are on point!

Monday: Tofu and Vegetable Fried Rice

Tofu is ideal to lower this recipe’s cost per serving, compared to a version made with meat. Add it at the same time as the rice to a mixture of cooked veggies in a large skillet. Extra flavour comes with soy sauce and sambal oelek, two basic ingredients you keep in your fridge. We’d take simple and economical vegetarian dishes like this one more often!

Tuesday: Miso Soup with Turkey Meatballs

Make the meatballs in this recipe with a mixture of ground turkey and shape them using an ice cream scoop. Drop them carefully into the broth along with the carrots and mushrooms. The addition of miso gives even more flavour to this comforting soup. Serve it garnished with bean sprouts and green onions.

Wednesday: Cheese Ravioli with Smoked Salmon

This recipe is ideal to get through the bag of frozen ravioli you’ve had in the freezer for a while and free up some space for your holiday provisions. Cook the pasta in a skillet with some water until the water has completely evaporated. Add sesame seeds and onion powder, then continue cooking until the ravioli are lightly golden on each side. Serve with arugula, sour cream and smoked salmon. This 30-minute dish promises to rally your whole family around the table.

Thursday: Poached Eggs with Spinach and Lentils

This healthy vegetarian option is perfect for weeknight dinners. Add spinach in two batches to a spiced mixture of tomatoes and lentils. With a spoon, make a well in the tomato sauce and crack an egg into it with a sprinkling of feta cheese. Served with croutons, this hearty and tasty dish makes an excellent lunch or brunch as well.

Friday: Potato and Ham Croquettes

Finish the week with a quick and easy supper that’ll make the kids happy. Shape the patties with a mixture of mashed potatoes and ham, cheeses and green onions, then press them into breadcrumbs. Pan-fry the croquettes and serve them with a vegetable of your choice and a sauce made with yogurt, mayonnaise and mustard. As the patties can be frozen (oh, yes!), get a head start on a future meal by doubling the recipe.
