In a large bowl, whisk together all the ingredients. Set aside.
In a large pot of salted boiling water, cook the potatoes until tender. Drain and let cool.
Add the potatoes to the dressing along with the pickles and bacon. Season with salt and pepper and toss well. Add the eggs and toss gently. Serve warm.
To cook the perfect hard-boiled eggs, place them at the bottom of a saucepan. Cover with cold water. Place a lid on and bring to a boil over high heat. Remove from the heat and let rest for 10 minutes. Drain and rinse under cold water.
