8 Popsicle Recipes to Savour in the Summer

Whether you make them with fresh fruit—local or exotic—or incorporate sweet syrups, creamy mixtures or even alcohol, popsicles are a real treat during the warm season.

1. Starfruit Popsicles

Starfruit gives its beautiful yellow colour to these popsicles thanks to the juice it yields from its puréed flesh. Heat up the precious liquid to dissolve some sugar and sweeten the flavour. These tropical iced lollies will put sunshine in your summer.

2. Bloody Mary Popsicle

This version is reserved for adults only and uses the same ingredients as the Bloody Mary cocktail: tomato juice, lemon juice, Worcestershire sauce, Tabasco sauce, as well as vodka and celery salt! Mix everything in a pitcher—and have a glass while you’re at it if it’s happy hour!—and pour it in popsicle moulds. Put them immediately in the freezer. Chin-chin!

3. Lactose-Free Kiwi and White Chocolate Popsicles

The tangy flesh of the kiwi is the perfect complement to the mildness of white chocolate in this quickly made frozen dessert. Alternate between the puréed kiwi and the white chocolate mixture, made with lactose-free cream, as you pour them into the moulds. This method produces a marbled popsicle that’ll make you melt with envy!

4. Banana Caramel Popsicles

Putting the great banana-caramel duo in the spotlight, this recipe is a real crowd-pleaser. To make it, purée store-bought ice cream, caramel and bananas together in a blender. The final touch? Drizzle sticky caramel over the frozen popsicles just before giving them to the kids.

5. Yogurt Popsicles with Cherries and Chocolate

Frozen yogurt treats are always welcome in the summertime. This recipe, which uses plain yogurt, canned Bing cherries and chocolate chips, is no exception. It takes barely 15 minutes to make, but you still need to be patient and wait out the six hours necessary for the popsicles to freeze. Fresh delight guaranteed!

6. Avocado Ice Pops (Paletas de Aguacate)

Paletas are the Mexican version of our popsicles, and this recipe showcases the velvety flesh of the avocado. Once crushed, mix it with sweetened evaporated milk and sugar. Just before eating the paletas, sprinkle them generously with lime juice to wake up all the flavours. A scrumptious addition to a sunny afternoon.

7. Pineapple and Basil Popsicles

The marriage of flavours between pineapple and basil is just as magical as that of the famous combination of strawberry and basil. Make this mixture by blending the diced berries with basil and a light syrup. Result? A lovely blend of textures that will put everyone in a good mood at snack time.

8. Lemonade and Strawberry Popsicles

What would summer be without fruit popsicles to savour? Our seasonal little local fruit, strawberries are an essential ingredient in the confection of these frozen treats. Purée the berries and add them to a mixture of homemade syrup and lemon juice reminiscent of lemonade. Between the sweet and acidic flavours, the perfect balance is reached for absolute refreshment!
