How to Use Leftover Corn

Don’t know what to do with excess corn cobs from your recent corn-husking party? To keep from just eating buttered corn on the cob these next few days, here are a few different ways to use corn kernels in recipes.

1. Pickled

You’ll never lose a single kernel of precious sweet corn again when you prepare a jar of pickled corn, whose ingredients can be adjusted depending on the number of cobs you have on hand. This vinegary condiment, lightly flavoured with cumin and cilantro, will be the star of your next taco night.

2. In Mexican dishes

Corn kernels are standard ingredients in tacos, quesadillas and burritos. Only a small amount is required to enhance these dishes with both flavour and colour. You can even replace the frozen corn that’s listed in the recipe with fresh.

3. In a salad

Add corn kernels to a green or even a pasta salad. They’ll punctuate each bite with a sweet taste.

4. As a garnish

You can add a touch of freshness to a meat or fish dish by garnishing them with corn kernels. You can even combine them with lime juice, fresh herbs and julienned vegetables.
