September 18 to 22, 2023: What to Cook This Week

Monday: Roasted Chickpea and Feta Wraps

Eating a vegetarian meal is a good way of saving time on busy weeknights and this recipe, ready in less than 30 minutes, is a logical choice. To make it, roast canned chickpeas in a frying pan with onions. Sour cream, feta, tomatoes and lettuce complete the list of toppings for this generous wrap, which also makes a delicious lunch.

Tuesday: Shrimp and Spinach Lasagna

Shrimp, spinach and bechamel sauce are the base ingredients for this meal that’ll make everyone at the table very happy. The recipe requires a few steps, including the preparation of the sauce as well as the cooking of the pasta and shrimp. Once you’ve wilted the spinach with garlic, it’s time to assemble the lasagna. Finish with a sprinkling of a variety of cheeses. Make it in advance and keep it in the fridge until you need to bake it for dinner.

Wednesday: Pâté Chinois (Shepherd’s Pie)

Cut the week in half by serving a deeply comforting dish to the whole family. Your kids especially will thank you! We’re speaking of pâté chinois (or shepherd’s pie), of course. Two varieties of potatoes are the ideal choices for this classic version: Russet or Yukon Gold, perfect for mashing. Spread the mashed potatoes last, over the creamed corn and ground meat. An easy recipe to remember, double up and freeze. Who can beat that?

Thursday: Kitchen Sink Green Vegetable Soup

This recipe is ideal to avoid wasting withered vegetables that are just waiting in the fridge to be eaten. Check your crispers and gather everything that can be added to this soup. Broccoli, baby spinach, collard greens, kale, Swiss chard; the base of this soup, made with chicken broth, potatoes, onion and garlic, works with everything!

Friday: Sausage, Vegetable and Cheese Sheet-Pan

For Friday night dinner, you’ll want something simple and savoury that will leave you with little dishwashing. This sheet-pan recipe, which includes sausages, bell peppers, zucchini and broccoli, hits all the marks. To add to the pleasure, spread cheese curds for the “squeak, squeak” goodness. Delicious served with a speedy mayo and ketchup sauce.
