13 Soups Inspired By Canadian Terroir and Beautiful Winterscapes This story is a feast for the eyes, born out of a sizable challenge: to develop 13 unique soups that each represent a province or territory, each paired with a photo of a stunning winter home. The results are telling, revealing just how great the impact of the landscape is on Canadian cuisine.

1. Sesame Salmon and Wonton Soup

BRITISH COLUMBIA

With wild Pacific salmon and Asian-inspired veal dumplings, British Columbia’s DNA is well entrenched in every bowl of our salmon and veal wonton soup. This flavourful and visually striking dish could be served in some of the country's best Chinese restaurants, but it is perfectly at home in your kitchen.

2. Steak ’n Egg Soup

Alberta

This stick-to-your-ribs, brunch-inspired soup simply had to represent Alberta—two-thirds of Canada’s beef comes from the province. With beer broth and caramelized onion, it’s reminiscent of French onion soup, but steak and eggs elevate it to delicious new heights.

Manitoba

When we think of Manitoba, we think of lakes. And where there’s a lake, there are sure to be ducks! So went the line of thinking when we developed this duck soup with wild rice. With local wild rice for texture and some wine for colour, it’s a recipe worthy of the Land of 100,000 Lakes.

4. Barley, Squash and Broccoli Soup

Saskatchewan

The blond fields of wheat, barley and mustard so commonplace in the Bread Basket of Canada were the inspiration for this soup, which also happens to be the perfect homespun remedy for the common cold. We added chicken to make it heartier—and because it’s good for the soul.

5. Curried Squash Soup

Ontario

Canadian diversity connects with Ontario’s great agricultural tradition in this curried squash soup. The twist? A healthy dose of curry and chili peppers, two bold aromatics that infuse exquisite Indian flavour into the mix, spicing up a delicious weeknight meal.

6. Vegetable and Fava Bean Soup

Quebec

The cream of tomato soup and cracker combination is a cult classic. We transformed it into a heartier soup by adding chubby fava beans typical of the Saguenay-Lac-Saint-Jean region. Of course, the addition of Oka, one of the most iconic Quebec cheeses, had to make its way into this soup in the form of a warm, melty Oka cheese pastry.

NOVA SCOTIA

Canada is lucky to be blessed with a wealth of delicious seafood. One of our most important exports is scallops, 80% of which are harvested off Nova Scotia’s Georges Bank. We’ve honoured these delicacies with our cream of celery soup with scallops that are pan-seared to golden perfection.

NEW BRUNSWICK

Lobster and New Brunswick are a match made in heaven. This chowder recipe is a tribute to the fishermen who make it possible for us to enjoy this crustacean from coast to coast. We had to slip in a lobster roll reference, of course: hence the toasted hamburger bun served on the side.

Most pea soups native to the area contain some combination of salted meat, root vegetables and dried yellow split peas. The common denominator? Dumplings—or doughboys, as they’re often called in Newfoundland. We only made one addition to our recipe, but it’s a game-changer: sharp cheddar cheese.

This golden soup can be made in a hurry and wears its test kitchen-appointed nickname, Gold Rush, very well. Its turmeric, white wine and honey broth is so savoury and comforting, you’ll go to great lengths to get another bowlful.
